Ingredients:
1/2 c. rice vinegar
2 T. sugar
1 1/2 t. Kosher salt
1 seedless cucumber, thinly sliced
1/2 red onion, thinly sliced
Directions:
Bring the vinegar, sugar, and salt to a boil in a small saucepan, stirring. Remove from the heat; stir in 1/4 cup ice cubes until melted. Toss the cucumber and red onion in a serving bowl with the vinegar mixture; place in the refrigerator.
**I love the little dish of vinegar cucumber salad that some Asian restaurants give you when you first sit down. I inhale it and I don't share. This recipe tastes exactly like that! Enjoy! {I found this recipe in the Food Network Magazine Aug/Sept issue.}
Side note: We have all heard about the Hostess with the Mostess. I am just hoping to be the Hostess with the Doing-the-Freakin-Best-I-Can! I have 12-14 people coming to my house this weekend! Yes...I said 12-14. Items checked off my list: The menu has been organized. I purchased a new "vintage" kitchen table from an antique store {$80! a steal!} and accessorized it with chairs from World Market. We bought a bed for our other guest bedroom, decorated it with a lovely bedding set from Macy's. Did I mention that all of this was done in two days?!
