Ingredients: 2 (15 oz) cans black beans, drained and rinsed 1 1/2 c. vegetable broth 1 c. chunky salsa 1 t. ground cumin 4 T. sour cream 2 T. thinly sliced green onion Directions: In an electric food processor, combine beans, broth salsa and cumin. Blend until fairly smooth. Heat the bean mixture in a medium saucepan over medium heat until thoroughly heated. To serve, ladle soup into 4 individual bowls and top each bowl with sour cream and green onions. **Ok, I am not sure when Fall arrived, but it is here and I am busting out all my go to soup recipes. This one is definitely high on my list. It is such an easy healthy recipe, a vegetarian option, and I always have these ingredients on hand. I usually use this salsa.
